Pilots indicate the two were really much closer. The biggest difference in acceleration appears to have been the fact that the MiG used a centrifigal flow engine and the Sabre an axial flow which appears to take longer to spool up.
Sabres easily outdove MiGs, and were faster in level flight and shallow dives due to the MiG's nasty tendency to break up if it went supersonic. MiGs were interconnected with their air brakes to deploy them at Mach 0.95-97 to prevent that.
The pilots really made the difference, not the aircraft.
