The term red neck I believe goes way back to the men working in the fields in the South during the summer.  Due to the blinding hot sun, people worked with their back to the sun and this would cause them to get a sun burned neck, hence the term red neck.

Also, the cowboys would wear a bandana or neck scarf to protect their necks while on the range.

I remember reading this a long time ago.  I am sure there are stories as to the term red neck.
